Not quite dry, and that is deliberate. Carl Jung's conventional Chardonnay carries a little residual sweetness that fills the space alcohol usually occupies, so it reads as smooth rather than hollow. Citrus and green apple do most of the aromatic work with ripe peach behind them, and a well balanced acidity keeps the whole thing fresh. The fruit is from La Mancha in Spain, and a 100ml glass runs about 20 calories. Serve it at 6 to 8 degrees and put it next to fish, which is where the winery points it. Carl Jung has done nothing but dealcoholised wine for over a century, working out of Schloss Boosenburg in Rudesheim am Rhein, and now ships more than ten million bottles a year into thirty odd countries.
