Sherbet Daydream

Named after the fizzy sherbet powder from old British sweet shops, this is one of the more playful things Muri makes at its Copenhagen fermentation house. The base is red currant juice with pickled rhubarb, and the aromatics come from juniper and a small pour of Douglas fir, which is where the resinous, pine forest edge lands. Fermentation does the rest, building the acidity and structure a soft drink never has. It comes out bright pink, sparkling and dry. Expect red fruit and fragrant pine up front, then the sharp snap of rhubarb, then a finish that stays tart and lightly herbal instead of sweet. The bottle is 750ml at under 0.5% ABV and around 14 calories per 100ml, so a full glass costs you very little. Open it as an aperitif, or put it next to oysters, ceviche, crudo and anything raw or cured from the sea.
