The name is a nod to Yamilé Abad, the Peruvian oenologist who first walked the Muri team through carbonic maceration. What came out the other side is a sparkling rosé built on gooseberry and raspberry juice, with smoked rhubarb doing most of the aromatic work. Underneath the fruit sit honey, goldenrod, angelica root, star anise and pink peppercorn, which is a lot of moving parts for something that drinks this easily. The first impression is soft red fruit and fresh raspberry. Then the smoke arrives with an almost creamy quality, and the peppercorn stretches the finish out and keeps it faintly spiced. Bubbles are fine, acidity is gentle, and the overall read is dry rather than fruit sweet. Pour it with smoked fish, grilled chicken, barbecue or a creamy sauce, or anything carrying real aromatics. 750ml, under 0.5% ABV, about 16 calories per 100ml.
