The palate then opens into cooked agave and finishes mouthwatering rather than sweet, which is the honest tell of a tequila substitute that's paying attention. Roasted Blue Weber agave and smoked cherrywood are the two ingredients doing the work, and the smoke is what keeps it from reading as flavoured syrup. Margaritas and palomas are the obvious homes for it, though it also holds up with nothing more than soda, lime and salt.
