This is the most conventional drink in Monday's range and probably the sensible place to start. The botanical bill reads like an actual gin, with juniper, orange, cassia bark, coriander and nutmeg, plus rosemary and a pinch of sea salt layered in. Tonic character comes from orange oil, grapefruit, lemon and lime oils. Juniper leads on the nose, citrus follows, rosemary trails. Because it arrives premixed, the tonic is already in the bottle, so the ratio is fixed and there is no risk of drowning it with a heavy pour. The base is carbonated Australian spring water, stevia does the sweetening, and the result is sugar free, gluten free and free of artificial additives. Sold in four, eight and 24 bottle packs. Serve it over plenty of ice with a lemon wheel. It drinks dry and faintly savoury rather than sweet, which is what a gin and tonic is supposed to do.
