Wonderspritz

An Italian aperitivo lives or dies on its bitterness, and this one gets that from gentian rather than from sweetness pretending to be complexity. Orange sits on top, herbs fill the middle, and the whole bottle is built to be assembled rather than poured neat. Start with the distillery's own ratio. Two parts Wonderspritz, three parts alcohol-free sparkling wine, one part soda or mineral water, over ice with a slice of orange. When you want something simpler, tonic water on its own does the job. Vegan and gluten-free, like everything else Siegfried makes without alcohol. Serve it genuinely cold and before dinner, and treat the orange slice as part of the recipe rather than decoration, because the oil in that peel is doing real aromatic work.
