Spades Sapiir

The bottle that started the sapiir range. Spades leans savoury and fresh rather than sweet, with green cardamom and herbs up front, sweet citrus and native lemon myrtle behind them, and Tasmanian pepperberry at the end doing the clever part, creating the illusion of alcohol heat in the throat where there is none. Tonic is the intended partner and pulls the layers apart, though it also holds up as a base for cocktails that would normally lean on gin. Garnish with dried lime, rosemary, strawberries or a few peppercorns depending which way you want to push it.
