ALTD names its bottles after Australian cicadas, and the Silver Princess sings loudest at dusk, which the brand suggests is exactly when to pour this one. It is their pink gin alternative, and it earns the colour honestly. Strawberry gum and wild rosella carry the berry and rose aromatics, cinnamon myrtle and pink peppercorn add spice, cherry wood gives it a soft woody backbone, and native desert lime cuts through with real tartness. Colour comes from beetroot and rosella rather than anything synthetic. Botanicals are copper distilled and the native extracts are hand made in Marrickville, in Sydney's inner west. Serve 50ml over ice with a floral aromatic tonic, violet or grapefruit both work well. Sugar free, gluten free, vegan and alcohol free. If you like the prettier, spice-forward end of pink gin rather than the sweet supermarket version, this is the one worth trying.
