An-marabula is the Kakadu native peach, harvested in Kakadu National Park by Bininj people, and it is the reason this tastes nothing like a supermarket bellini. ALTD Spirits built the drink with Kakadu Kitchen, a First Nations food business, as part of a limited native ingredient series capped at 300 cases. Peach nectar carries it, with botanical extracts and dealcoholised Australian sparkling wine underneath, which gives the can the dry backbone a real bellini gets from prosecco. It comes as a 250ml can, gluten free, sold in four packs. The Italian original is peach puree and prosecco, so what is happening here is closer to translation than imitation. Serve it very cold, straight from the fridge into a flute, and drink it before dinner where a bellini belongs.
