Mystic Dove Paloma

A paloma is mostly grapefruit, lime and salt with the tequila in a supporting role, which makes it one of the easier classics to rebuild without alcohol. Beckett's builds Mystic Dove on tart grapefruit and blue agave over a base of distilled botanicals, so the agave note carries some weight instead of tasting like plain sugar water with grapefruit poured in. It comes in 12 ounce cans at 35 calories each, four to a pack, from a California brand that also produces a range of non-alcoholic spirits and liqueurs under the name Beckett's '27. Salt matters more than garnish here. Run a lime around the rim of a Collins glass, salt it, fill it with ice and pour, and the salt pulls the grapefruit bitterness into focus the same way it does in the alcoholic version. Straight from a chilled can is fine at a cookout, which is where the brand aims it anyway.
