Faux Wine is a California-made alcohol-free wine alternative that never starts as wine at all. Instead of fermenting and then stripping the alcohol out, each blend is built from verjus, the pressed juice of unripe wine grapes, then layered with varietal grape juice, fruit and botanicals chosen for the role they play on the palate: acidity, texture, aromatics and tannic structure. Nothing is fermented and nothing is dealcoholised, so the wines are still rather than sparkling and sit at 0.0% ABV. The Melange Collection covers Blanc, Rose and Rouge, all made in small batches, lightly filtered and built for the table.
