Zero Blush

This is the rosé counterpart to Anna Spinato's Zero, built the same unusual way. Grape must is filtered and chilled to freezing so fermentation never begins, then natural carbon dioxide supplies the perlage. Nothing is dealcoholized here because nothing was ever alcoholic in the first place, which sets it apart from most of the 0.0% bottles beside it. Bright soft pink in the glass with a delicate fresh grape scent. The palate leans into pomegranate, raspberry, red rose and bergamot flower. Fruity and gentle rather than dry and mineral, so it drinks closer to a soft frizzante than a Provence rosé. The Spinato family has worked this corner of Treviso since Pietro Spinato founded the winery in 1952, in Valdobbiadene hills that UNESCO now protects. Serve Blush thoroughly chilled. It earns its place as an aperitivo, at a celebration where not everyone is drinking, or poured over ice on a hot afternoon.
