Kelp and dulse are not obvious drink ingredients, which is more or less the point. Marine is the coastal one in the Everleaf range, built to travel from shoreline down to seafloor. Juniper and eucalyptus open it with a clean, salt-tinged lift, bergamot and pink rock rose carry the citrus and the perfume, and rust-red dulse seaweed lands the finish somewhere between briny and sweet with a peppery edge. That saline thread is the useful part, because it gives an alcohol-free drink the savory grip that normally comes from a real spirit. The house serve is a Bergamot Spritz, 50ml over ice topped with 150ml light tonic and a few slices of lime, though it also holds up in a mojito, a margarita or a dry martini. Water, sugar, acacia gum, carrageenan and natural botanical distillates and extracts make the base, in a 50cl bottle.
