Paul, Everleaf's founder, is a conservation biologist who also ran a bar, and he built this range after a year of testing plants, dehydrating, macerating and extracting them until the results had the depth he wanted from a good spirit. Forest is the earthy, bittersweet one. It's laid out like a walk down through a wood. Orange blossom and chamomile sit at the top with a thread of saffron, vanilla, cinnamon, cassia and pink peppercorn warm the middle, then orris root, angelica, liquorice and vetiver close it out with a dry, rooty bitterness. Acacia gum and carrageenan in the ingredient list give the liquid real weight, so it holds its shape against a mixer instead of thinning out. The house serve is 50ml over plenty of ice topped with 150ml light tonic and a fat orange slice. Bottled at 50cl by a certified B Corp and 1% for the Planet member.
