Empress 1908, crafted by Victoria Distillers in British Columbia, is best known for the vivid indigo gin created with the Fairmont Empress Hotel. In December 2025 the house released Empress 1908 0.0 Indigo, an alcohol-free botanical spirit with the same butterfly pea blossom hue, bold citrus, and subtle juniper, making zero-proof cocktails as striking as the original.
