Most non-alcoholic spirits get built by macerating botanicals in alcohol and then stripping it back out. AMASS goes the other way. Every one of the 14 botanicals in Riverine is distilled individually in a proprietary hydrosteam process that pulls essential oils using water vapour instead of alcohol, so nothing has to be removed afterward. The lineup reads like a walk through a Pacific Northwest rainforest. Juniper, coriander, orris root, angelica root, lemon peel, cardamom, sorrel, cucumber, apple, mint, parsley, sumac, rosemary and thyme. Bright sumac on the nose fades into cool mint. Citrus, sorrel and coriander open the palate with real piquancy, then moss and earth settle underneath. Juniper and parsley linger deep on the back palate while rosemary carries a long herbal finish. Zero calories, vegan, non-GMO. Made in Los Angeles. Easiest serve is over rocks with a splash of tonic and a lemon wheel, though it holds up in any zero-proof cocktail built for gin.
