Rosemary is the surprise here. Most alcohol free aperitifs run the Italian bitter orange playbook and stop there, but Wilfred's is built on four botanicals, bittersweet orange, rosemary, rhubarb and clove, distilled and extracted rather than simply flavoured, and the herb is what keeps the glass from sliding into fruit juice territory. It lands drier and more savoury than the category norm. The bottle is 500ml at 0.0%, around ten serves, roughly 21 calories per 50ml pour, vegan, free from allergens, and made without artificial flavours, sweeteners or colours. Serve it long over plenty of ice with a premium tonic water, which is the pour the bitterness was calibrated for. The brand notes it has landed on the New York Times list of best non-alcoholic drinks five years running, which is a decent record for a small British aperitif.
