Yuzu, Basil & Lemon

The interesting part of this can is what sits underneath the citrus. Banks Herbarium, the brand's hallmark non-alcoholic spirit, is distilled in Victoria's Yarra Valley using mountain water, and each of its five botanicals is distilled separately before blending. Cassia bark brings warm cinnamon sweetness, lemon myrtle and lime open it up, wattleseed adds a nutty roasted note closer to coffee than nuts, and wild Tasmanian pepperberry supplies the spice that lingers. Over that base, yuzu and lemon juice concentrates do the sharp citrus work, a small hint of basil adds green sweetness, and tonic finishes it. Quinine from cinchona bark is in the mix, so it drinks like a real tonic serve rather than a soft drink. Lightly sweetened with cane sugar and erythritol, alcohol free and ready to go. Serve it very cold, over ice, with a lemon twist.
