Banks distils in Healesville, out in Victoria's Yarra Valley, and this can is essentially their botanical base stretched into a long summer drink. The spirit underneath is built from botanicals run through the still one at a time rather than together, so each keeps its own character. Native desert lime and lemon myrtle handle the citrus lift, white kunzea brings a eucalyptus and honey note you won't find in an imported gin alternative, and wild Tasmanian pepperberry sits underneath with a quiet heat. Cucumber, mint and lemon go over the top, which is what makes it read as a garden cocktail rather than a flavoured soda. Each 250ml can is 0% ABV and 9 calories, low in sugar and vegan, cut with sparkling water and Yarra Valley mountain water. Fine straight from the fridge, better over a full glass of ice with a cucumber ribbon if you're pouring for other people. Banks donates 10 cents from every four pack to Bush Heritage Australia.
