Twenty seven botanicals go into NONA's alcohol-free aperitif, and the ones you notice are blood orange and orange zest up front with bitter gentian root and quassia holding down the finish. That bitterness is the entire point of the style. Spritz is meant to stand in for the Italian aperitivo bottle, so it needs enough bite to survive a long pour of tonic or soda over ice without collapsing into orange soda. NONA builds it in Belgium using steam distillation, with no alcohol involved at any stage of production. The house serve is 5cl of Spritz to 10cl of Indian tonic with plenty of ice and an orange slice, and a 70cl bottle covers roughly fourteen of those. Per 100ml it comes to 31 calories and 8 grams of sugar. Founder Charlotte developed the recipe with feedback from working chefs and sommeliers rather than in isolation.
