Chilli is the surprise here. Alongside the gentian root that supplies herbal bitterness, the citrus that brightens everything and the quinine that gives the blend its structure, Dr Zero Zero adds peperoncino for a subtle warmth on the finish. That warmth is exactly what goes missing when alcohol comes out of an aperitivo, and it's a smart way to put it back. Made in Italy with no alcohol at any point in production rather than dealcoholised afterwards, AperZero also skips synthetic colour, taking its shade from elderberries and yellow carotenes. Expect it to shift a little with time and light, which is just what natural pigment does. Vegan and gluten free, at 55 calories per 50ml serve. Build it into a spritz, or pour it over ice with good soda or tonic and a slice of orange.
