Tempranillo grown in La Mancha is the starting point, and it goes through a full fermentation and a spell in barrel before anything is taken away. The alcohol comes out last, by vacuum distillation at low temperature, done just before bottling so the finished wine holds its aromatics as long as possible. The color is ripe cherry at light intensity. Fruit leads the nose with oak sitting quietly behind it rather than shouting, and the palate opens fuller than most 0.0% reds manage, carrying medium structure and real persistence. That weight is the entire point, since alcohol-free reds usually collapse across the mid-palate and finish thin. Serve it at 14 to 17 degrees, cooler than a room temperature red but nowhere near chilled, with roast meats, anything off the grill, or salty appetizers. 750ml, roughly 22 calories per 100ml.
