Built as a brut in the winery first, this only loses its alcohol at the very end of the process, which is exactly why the bubbles behave. They come up fine and hold for a long stretch instead of collapsing within a minute of pouring, which is where plenty of zero proof sparklers give themselves away. The grape is Airén, the same central Spanish white behind the still version, and the result reads clean and genuinely refreshing rather than sweet. Serve it hard chilled, 4 to 5 degrees. The winery points it at light soups and consommés, cold creams like vichyssoise, salads and cheese, which tracks, since it works better as an appetite opener than as something to finish a meal with. Bottled at 750ml and also in a 200ml single serve. 0.0% ABV, around 22 calories per 100ml.
